Ingredients
to cook rice:
  • 1½ cup basmati rice, washed & soaked 30 minutes
  • 6 cups water
  • 1 star anise
  • 7 cloves
  • 1 inch cinnamon stick / dalchini
  • 1 bay leaf / tej patta
  • 2 cardamom / elaichi
  • 1 tsp black pepper
  • 1 tsp oil
  • salt to taste
for biryani:
  • 4 tbsp oil / ghee
  • 1 onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 5 mushrooms, chopped
  • 6 cauliflower / gobi, florets
  • 1 potato, cubed
  • 1 tomato, finely chopped
  • 8 broccoli, florets
  • ½ tsp turmeric powder / haldi
  • 1 tsp kashmiri chilli powder
  • ¾ tsp coriander powder
  • 1½ tsp biryani masala
  • salt to taste
  • 1 cup water
  • ½ cup curd / yogurt
  • fistful mint / pudina
  • fistful coriander leaves, chopped
  • ¼ cup fried onion
Instructions ( 1 cup =255 ml)
rice cooking recipe:
  1. firstly, in a vessel take water along with spices, salt, oil and basmati rice.
  2. cook the rice grains for approximately 10 minutes.
  3. further drain the rice and rinse with water.
student biryani recipe:
  1. firstly, in a large kadai take oil / ghee.
  2. further saute onions, ginger-garlic paste.
  3. add vegetables of your choice and saute.
  4. furthermore, add turmeric, chilli powder, coriander powder and salt.
  5. add water and curd. mix well.
  6. also add biryani masala.
  7. add broccoli and tomatoes.
  8. furthermore, cover and cook for 15 minutes.
  9. now take a cup of masala stock and keep aside.
  10. layer mint, cooked rice, reserved masala stock.
  11. also layer with mint, coriander leaves and fried onions.
  12. finally, cover and cook for 20 minutes and serve.
