Gajar ka halwa, also known as gajorer halua, Gajrela, and Carrot halwa is a carrot-based sweet dessert pudding from the Indian subcontinent. It is made by placing grated carrots in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly.
Beetroot and Carrot are the two popular root vegetables with amazing nutritional properties. Benefits of eating Beet raw or cooked are; improves blood flow, reduces blood pressure, detoxifies the liver, treats iron deficiency Anaemia, prevents cancer, helps in constipation, prevents birth defects, good for skin and muscles, has a positive effect on our mood and mental state, cures inflammation.
Some of the benefits of eating carrot are; maintains good eyesight, helps prevent infection, provides healthy skin (either you can consume or apply it as a face mask), cleanses the body, protects teeth and gum, slows down ageing, prevents from heart disease, stroke and cancer.
Aren’t these benefits enough to convince oneself to eat it in any form? Now coming to the recipe, today I’m sharing this very simple, easy, quick Beetroot Carrot Halwa. The two words quick and halwa are very contradictory :). Usually, if you are planning to make it in a very traditional way, it’s going to take a lot of your time and constant attention.
There’s when pressure cooker plays the role to make everything quick and easy. Here, I have used very few ingredients, not even khoya or condensed milk.the grated beetroots will cook in the milk and the milk will start to reduce and evaporate. when the milk has 75% to 80% reduced, add the ghee, sugar to the halwa mixture. stir well and continue to simmer and cook on a low flame. do keep on stirring the beetroot halwa in between.

take a pan and add ghee to it. let it heat properly. |

add grated carrot and beetroot to it. |

let it cook for 20- 25 mins till the water portion will burn and carrot and beetroot cooked properly. |

then after 25 mins add milk. |

cover the pan and let it cook for another 20 min on medium flame. |

in between after 10 mins add milk powder to it and mix it properly. |

then add sugar to it. |

cook it for another 10-15 mins on low flame till the sugar water burn properly. |

increase the flame to medium and cook it for another 2-3 mins. and keep stirring. |
